I’ve never done a What I Ate Wednesday post before, but since I have nothing running-related to share I thought, why the hell not? Though this will actually be more of a What I Ate Friday & Saturday post, as (a) I have eaten nothing interesting today and (b) I have food photos from Friday and Saturday.
I went to Whole Foods during my lunch break, and since I wasn’t in the mood for the dining hall’s offerings that day I picked up lunch while I was there. I got the Asian salad shaker.
Barley, wheatberries, edamame, carrots, tomatoes, etc, with a yummy dressing.
It is vegan and filling, and the portion size is huge!
I managed to eat half of this and I was stuffed. I also treated myself to my Friday Starbucks, though I got a black iced coffee instead of my planned caramel macchiato. Why, you ask? Because I had one of these and decided that was enough sugar:
An accepted student’s mom brought these in, from an Italian bakery in Bayside, NY. It was pretty amazing.
On Saturday, after drinking wine and watching J plant flowers gardening, I made strawberry basil pesto pasta salad. You know a recipe is pretty easy when you can drunk cook it and there are no catastrophes. It was pretty damn tasty.
The only problem is that it made an insane amount and there’s no way I’ll be able to eat it all. J’s a really picky eater so he won’t touch it. I should have cut the recipe in half or even smaller, but while I can drunk cook, I cannot do drunk math.
Last night I made Oh She Glows lemon dill tofu, sautéed spinach, and cheesy cauliflower pancakes. I made the cauliflower using Daiya cheddar and flax eggs, so they were vegan, and baked them instead of cooking in oil on the stove. I baked them for about 10 minutes per side at 400 degrees and they turned out great, browned and crispy. Delicious meal but I forgot to take pics. Fail.
